Modified starch builds upon the inherent properties of native starch; by employing various methods to alter its natural characteristics according to specific needs, it acquires enhanced functional attributes or entirely new properties. Consequently, the scope of starch application has expanded significantly. It is now widely utilized across diverse sectors-including the food industry, pharmaceuticals, water treatment, papermaking, foundry operations, and packaging materials-and occupies a pivotal position within industrial applications. The strategic development of starch resources and the production of multi-purpose modified starches have thus become integral components of my country's industrial landscape.

Dating back to the mid-19th century, the modified starch industry boasts a history spanning over 160 years. Over the past three decades, the variety of modified starches has steadily increased, and their scope of application has continued to broaden. The annual global output of modified starch currently approaches 6 million tons, with production predominantly concentrated in developed nations such as those in Europe and North America. As a vast nation endowed with a rich diversity of starch-yielding crops, my country stands as a major global producer of starch. Consequently, the modified starch sector within my country has experienced rapid growth and has attained a considerable scale of operations. Nevertheless, when compared with developed nations, my country still faces significant disparities across various dimensions-including production volume, product variety, quality standards, and scope of application. my country's starch modification technology currently lags behind global standards; this technological deficit has created a paradoxical situation where, on one hand, the domestic market suffers from a surplus of standard starch products and sluggish sales channels, while on the other, the nation remains compelled to import high-quality modified starches from abroad.

This phenomenon has garnered the intense attention of my country's starch science and technology professionals. Their collective focus is directed toward elevating starch modification technologies, enriching the diversity of modified starch varieties, enhancing product quality and functionality, reducing production costs, and minimizing environmental pollution. The ultimate objective is to comprehensively raise my country's standing within the modified starch sector, thereby narrowing the gap between domestic capabilities and advanced global standards. The future trajectory of modified starch development is expected to trend toward the production of graft copolymer starches (specifically designed as high-absorbency materials), starch-based fat substitutes, and the development of biodegradable plastics and starch-based adhesives. Concurrently, modified starches characterized by diversified varieties and compounded functionalities-as well as amphoteric and multi-modified starches, which offer superior performance characteristics compared to single-modification products-are also poised to gain increasing prominence and favor within the market.
