The primary methods for preparing pregelatinized rice starch are classified into two categories: wet processing and dry processing. Wet processing involves mixing rice starch with water, subjecting the mixture to gelatinization under high temperature and high pressure, and subsequently drying and pulverizing it to obtain the pregelatinized starch.

 

Dry processing, conversely, entails subjecting rice starch to dry heat treatment at high temperatures to induce partial gelatinization, followed by pulverization and sieving to yield the pregelatinized starch. Both methods possess distinct advantages and disadvantages: wet processing features a simpler procedure but entails higher energy consumption, whereas dry processing consumes less energy but requires a larger investment in equipment.
