Starch is a natural high-molecular-weight compound-specifically a polysaccharide-formed through the polycondensation of α-glucose units. It is one of the most abundant renewable substances found in nature; being biodegradable, it does not cause environmental pollution. Its molecular chains contain a multitude of reactive hydroxyl groups, thereby providing the structural foundation necessary for starch modification.

Modified starch refers to starch that has undergone physical, chemical, or enzymatic treatments to introduce new functional groups, or to alter its molecular size and granular properties. Building upon the inherent characteristics of natural starch, these modifications serve to enhance its performance and broaden its scope of application, thereby altering its natural attributes to better suit the specific requirements of various uses. Currently, the variety of modified starch products is steadily increasing, and their applications are becoming increasingly diverse. Widely utilized across numerous fields, modified starch brings immense convenience to our daily lives and professional endeavors.
